Platforms for characterization and transformation of food and raw materials:

 

✔️ The Dairy Technology Research Platform: the "Milk platform"/ La Plateforme Lait (PFL):

 

The PFL platform, as a component of the CALIS Food Pole, provides research collaborations, service offerings, and training to all academic and industrial partners:

▶️ Milk transformation methods:

  • Thermization and UHT sterilization of milk
  • Preparation of milk fractions
  • Cheese making and ultra-fresh products
  • Preparation of concentrates and powders
  • Valorization of milk by-products

▶️ Specific technological processes:

  • Membrane separation: microfiltration, ultrafiltration, nanofiltration and reverse osmosis
  • Cheese technology
  • Concentration
  • Drying

 

✔️ The PLANET Platform:

 

▶️ The PLANET platform is a specialized component of the CALIS Food Pole.

▶️ The missions of the PLANET platform are:

  • to participate in research programs;
  • to contribute to the development of methods and processes for the valorization of plant raw materials for various application areas (food, biomaterials and bioenergy);
  • to develop scientific collaborations with external partners;
  • to support training and knowledge dissemination.

 

✔️ Platforms of the PROBE Research Infrastructure:

The distributed PROBE infrastructure, as a component of the CALIS Food Pole, includes 4 platforms offering techniques and methods adapted to the chemical, physico-chemical, organoleptic and structural characterization of bio-based raw materials and processed products. This PROBE characterization offer is distinguished by its multi-modal and multi-scale aspect, ranging from molecular scales to those of the plant or organism. Open to academic institutions and industries, the service offer is specialized on food matrices, but it also includes requests in the fields of SEA and HEALTH.

- Analyses by mass spectrometry, NMR and microscopy and chemo-phenotyping, data processing / bioinformatics

- Analyses dedicated to the structural characterization of biopolymers (polysaccharides, lipids, proteins), in biological systems (plants, plant organs, cells…) or synthetic and model systems (foods and food matrices):

  • Identification and quantification of polysaccharides, oligosaccharides, peptides and proteins
  • Fine structure of complex polysaccharides and proteins

- Physico-chemical and organoleptic characterization of foods, analysis of lipids in foods and in neurosensory tissues by:

  • Mass spectrometry: characterization and quantification of aromas and sapid compounds, and lipids in food matrices / in vitro or in vivo studies of the direct and continuous release of aromas / studies of the interactions between flavor molecules and oral sphere proteins thanks to high resolution / global analyses of membrane lipids and/or targeted analyses of simple or complex lipids in biological matrices
  • Olfactometry: identification by gas chromatography coupled with olfactometry of odorant markers of aromatic extracts / methodological developments aimed at optimizing and accelerating olfactory threshold measurements as well as the measurement of the quality and hedonic character of complex olfactory stimuli
  • Sensory analysis and consumer studies: specific sensory analyses to ChemoSens: Temporal Dominance of Sensations (DTS), Polarized Sensory Positioning (PSP), Temporal Drivers of Liking and other sensometric methods / measurement of preferences for fat, salt and sugar and measurement of taste sensitivities (Tasty®) / sensometrics using SAS macro libraries and R packages / acquisition and analysis of sensory data using TimeSens®

 

▶️ PFP: Platform for the analysis of polyphenols from fruits, vegetables, foods, processed products

- Chemical and physico-chemical characterization of simple and evolved polyphenols, in complex matrices, by high resolution mass spectrometry (HRMS) and nuclear magnetic resonance spectroscopy (NMR):

  • Structural characterization, from simple structures to transformed polyphenols and hydrolyzable tannins including gallotanins, ellagitannins
  • Analysis of condensed tannins: % galloylation, DPm, A and B bonds, trihydroxylated…
  • Quantification or semi-quantification, to establish a kinetic evolution or compare modalities
  • Characterization of fingerprints without a-priori (non-targeted) and chemometric analysis in connection with metadata including origin, variety, color, organoleptic properties

✔️ The Technical platform for in vitro digestive environment simulation (DIGEST-IV):

▶️ The DIGEST-IV platform provides specialized services in the field of in vitro digestion within the CALIS Food Cluster.

▶️ The service offer of the DIGEST-IV platform concerns the screening and development of formulated products as well as the study of fundamental mechanisms with simulation of dynamic digestive systems modulated by physiological, pathological or dietary conditions.

▶️ More precisely, DIGEST-IV offers a service based on the use of static digestion systems (INFOGEST protocol, colonic fermentation in batch) and dynamic digestion to simulate the main gastrointestinal functions - digestive process in the tract and colon - for human and monogastric animal models (pig, piglet, dog):

▶️ Specific analyses and models offered as a service or collaboration:

  • Micro-GC: micro-chromatography (with thermal conductivity detector: TCD), HPLC (with diode ultraviolet detectors: DAD, refractometer), electrophoresis
  • Gastrointestinal digestion models: TIM1: TNO1 Intestinal Model / ESIN: Engineered Stomach and Small Intestine
  • Simulation of colonic fermentation by ARCOL bioreactors
  • Aerobic / anaerobic, cultural, molecular microbiology
