Platform for Profiling Properties of Food and Biobased Products

▶️ PROBE is a distributed INRAE Research Infrastructure attached to the TRANSFORM department. It provides integrated services for research on the structure, properties and functionalities (including sensory aspects in the case of food) of raw materials, products undergoing transformation and finished products.

▶️ Numerous physicochemical methods are deployed at different scales to identify the impact of structural determinants (composition, architecture) on the quality, properties and functionality of products, whether they are for food use (e.g. wine, chocolate) or non-food use (e.g. agromolecules and agromaterials derived from biomass).

▶️ PROBE relies on the skills of 4 IBISA-labelled platforms with strong complementarity in terms of molecules studied and approaches, as well as on the continuum “molecule/supramolecular organisation/organ/tissue/product”:

  • BIBS : Structural characterisation platform for biopolymers (polysaccharides, lipids, proteins), in biological systems (plants, plant organs, cells…) or synthetic and model systems (food and food matrices)
  • ChemoSens : physico-chemical and organoleptic characterisation of food, lipid analysis in food and neurosensory tissues
  • PFP : Platform for the analysis of polyphenols from fruits, plants, food, processed products
  • AgroResonance : NMR Platform for agronomy, agri-food and nutrition
